I recently got some raised beds built with sleepers. I told the landscaper I didn't want to keep a big old Acanthus. I presumed he a dug it up, but it seems he built on top of it. The poor plant has made its way back up through 2 foot of soil. I wouldn't mind keeping it but it looks huge at the front if the border.
I appreciate any advice on how I could how I could get rid of it (its too far down to dig up) or any design ideas that would make it fit in.

I assume you paid your landscaper good money to do the job? Tell him to come back and do what he was paid to do.
Those tricks are all too common, "Bury it and by the time it comes up again we'll be paid and long gone." You had a contract, he has to fulfill his part.
