Hi, I was just wondering when was the best time for cutting back Rosemary for drying out. Around this time last year I had the rosemary growing in a pot and somehow the pot got knocked over breaking a lot of branches. I cut the damaged branches off and dried them out in the hot press giving me lots of gorgeous rosemary. I planted the rosemary out this year and it has flourished, almost too much. I was looking to cut it back but I was wondering if now is a good time or should I leave it until next spring. If anyone has any advice about drying out thyme as well it would be much appreciated.

Im not sure about drying it out, but you can also freeze the herbs fresh in ice cube trays, that way you will have fresh.frozen all year round. you just freeze them with water in the trays simple as that.

No need to dry the rosemary. The bush is an evergreen and will stay green all winter long. Make sure it gets some water and cover the soil with mulch. Freezing is good for non winter hardy herbs like chives, parsley and coriander.
