Hi,
Since arriving in Australia I haven't been able to find a forum of the same caliber as this one, so I'll fall back on my fellow Irish chums. I want to try to tame the herb bed that was planted before I moved into my house, preferably before the snake / spider season begins, so, can someone suggest what to do with the pictured parsley? Keep picking at it for my cooking or dig it the hell outa there and start afresh? Thanks!

I think parsley gets bitter the older it gets so it would be an idea to harvest it and dry it or freeze it.there are great tutorials on freezing herbs on you tube.

Yep just dice the leaves up and put into ice cubes. Simples.

Parsley root is a useful ingredient: you will come across it in Eastern European and Russian recipes. I’ve scrubbed sections of root and frozen them, using them later to give an extra dimension to stews and casseroles - hearty flavored dishes.
