Grate a large courgette. Squeeze out the liquid in a teatowel. Cut up pepper, onion , garlic, chilli pepper or anything that you fancy finely. Put everything into a bowl. Add 2 large eggs. Add flour or chickpea flour. Mix like a thick batter. Fry on pan. Flatten down when the bottom starts cooking. Then turn and cook. A great way to use up excess courgettes. Hope this makes sense. Experiment and enjoy 😁 |

My courgettes were rubbish last year, so I didn't bother this year. But that recipe sounds worthy of a trip to our local green grocer. _________________ Be humble, for you are made of earth
