Finally finished off the Christmas chicken. We had three meals out of the meat and Thursday I boiled down the carcass, skin etc, left it overnight, heated it through then drained it through a sieve. When it was cold I skimmed off the hard fat and put it in a saucepan.
Then I chopped a whole heap of veg - carrots, celery, celeriac, swede and potato into cubes, put all but the potato in a slow cooker for two hours. Then added the potato for the last 45 mins. As that was cooking I thinly sliced an onion and fried it in the chicken fat.
It was served up in bowls with the onion on the top and with a thick chunk of crusty bread and butter. Yummy and just what you need on a cold Winter's day. _________________ Be humble, for you are made of earth
