Surely, it's the stem that most people eat but the tops are perfectly edible too.

Not keen on the outside stem. I usually cut that up and freeze for stews etc. I love the heart and stems' in the middle.

Well well, You actually eat the petiole, This is the bottom part of the leaf which is fleshy,
Bet you didnt know you also eat the petiole of Rhubarb..
