This is probably a stupid question but when a basil plant flowers should I cut the flowers off? And what is the benefit of this...

If the plant is flowering, cutting the flowers off MAY help to encourage more leaf growth. Basil flowers and stalks are perfectly edible- not much use in salads, or garnish, but perfectly ok in tomato sauces/soups, pasta dishes, stuffing fish etc.
