This cucumber plant is approx 5 feet tall and I can start to see it's roots appear on the soil surface.
Would you transplant it to a bigger pot?

The pot looks big enough to me, I would suggest that put some fresh compost , (The bag, not garden) on top to cover the roots. This happens all the time, you might have to do this three or four times in a season.

When you water the plant, are you giving it a good drenching?
If you water little and often (which is bad) you only wet the surface of the soil, encouraging the roots to remain close to the top.
I would suggest infrequent watering but when you do, saturate the soil and leave it drain.
