Instead of composting, try this! My wife was dubious, but after tasting it, she was converted. Pick all the leaves from the bolting salad - lettuce, rocket, whatever, about a carrier bag full.
Pint of milk and a pint of stock, veg or chicken depending on your preference. Season and bring to the boil. Add your salad leaves. When they are wilted, make a beurre maniƩ (rub some butter and flour together), and add pinches gradually to thicken the soup. Simmer for 10 minutes, then blend it with a hand blender, or in your machine. When done, add grated parmesan, and a whisked egg yolk if you like it rich. Serve with crusty garlic bread.
This recipe can be adjusted as you see fit- sometimes I add an onion and some white wine. I even did an asian version with coconut milk and wasabi. |

Sounds delicious, time for lunch ! Lettuce soup is meant to be good for the nerves and insomnia I've heard ! So maybe a lunchtime nap will be in order ! |
