I wanted to add colour to a meal of gammon steak and Spanish omelette -
These are covered on the blog.
one of the few veg left in the garden now are beetroot.
I sprinkled the chips with some Spanish sherry vinegar,
gives a lovely tang to the sweetness of the beetroot.

BEETROOT CHIPS
Cut chips to equal width.
Heat oil to 130C and fry the chips for 8-10 mins or until soft.
Drain and leave to cool .
Heat oil to 180C and fry the chips until crispy.
Drain, pat dry and serve.

Hi Simonj,
looks yummy!
I presume you use a deep-fat fryer??
and that the beetroot is raw??

Does the oil in the fryer go purple and if yes do you have to discard it before you cook in it again?

I do this with many root vegetables, but never tried it with beetroot. I use a normal pan, and a jam thermometer. If the oil does dye other vegetables: purple parsnips would go down a bomb with my nieces!
