How long can veg be left in ground?

Does all veg have to be harvested or can it be used as needed? Im told Turnips get sweeter with frost. What can be left and what needs to be taken up? I have Potatoes(records), carrots, parsnip, turnip and cabbage. Thanks |

carrots turnips and parsnips are left in the ground until required for use. Carrots may be harvested and stored in a pit or in a container of sand or peat in a frost proof house. Winter and Spring cabbages are hardy and can be left growing until required for use.

Thanks Michael. What about potatoe's? I cut stalks off about 6 weeks ago and am just using as required. Will they be ok or would it be better to dig them up? |
