Peel and chop squash into big bite size cubes and roast in oven at 180C for 10min only. Should still be firm. Meanwhile chop a small onion 2-3 cloves garlic a chili of your choice with seeds removed, and fry until tender in some good olive oil. Add a half a can of chickpeas with 150ml of stock cook for 5-10min , add your roasted squash and some chopped coriander. season to taste and its done. ENJOY
