I made some nice jam with the blackcurrants from our garden
Here's the recipe?
Ingredients
1 KG ripe blackcurrents
400ml spring water
1 KG organic sugar
Method:
Remove the stalks from the blackcurrants and rinse. Place them in a pan with the water, and boil for 10 minutes. Stir in the sugar, a little at a time. Stir continuously until the sugar has dissolved and gently boil for a further 15mins. Leave to cool for a little and pour into warm, thoroughly cleaned jars.
Makes 5 pots
The organic sugar is much more expensive than normal supermarket brands but if you're going to the trouble of growing your own chemical free fruit it didn't seem to make sense to have 50% of your jam made from a highly processed food. The Kilo of organic sugar worked out at about 70 cent per pot or about 5 times what it would have cost if I went with Tesco own brand sugar.
But more importantly the jam tastes great!!
