Hi Declanfl
July or August is the popular time for some people. Others go for late winter before bud burst.
If the hedge is very formal and neat it might need clipping twice a year (around June and again in late August). Although, you can get away with just the late August cut.
How old is the hedge? Beech is happier of it is left alone for a few years before cutting back.
How are you thinking of cutting back the hedge? Shears, secateurs or electric cutters?
There is a very good section on beech here, it tells you all of their uses etc.. http://www.the-tree.org.uk/BritishTrees/beech.htm
Cheers
