I was wondering if there were any books on Irish landscaping, specifically. anything with an emphasis on native Irish plants would be wonderful.

Flora Hibernica by Jonathon Pilcher and Valerie Hall for plants.
Landscaping is thin on the ground, but if you want a landscaping book with an "Irish" influence try Design Your Garden by Diarmuid Gavin.

I'd agree about Flora Hibernica (lots of photos)
and Diarmuid Gavin.

How about Garden Design by John Brookes.
It goes into how to design, doing up drawings etc.
It doesn't include any Irish stuff though.
